Was Dooku trying to train him as a secret apprentice, like with Ventress? Did they ever give a reason why Dooku had even trained him?

I dont think so. Grievous never had any force abilities, meaning Palpatine likely never saw him as a threat to his power, just a very powerful tool to be discarded at the end of the war.

He has lightsabers, he knows how to use them. And it being post-80s Star Wars, I guess they had to needlessly overexplain everything.

He was the leader of the separatist army Dooku trained him so he could stand a chance against Jedi.

That’s why he was always running away. Dooku trained him to use fear tactics and stealth and trickery to throw a Jedi off balance just long enough to kill them

Doesn’t even need to be secret, agents of the dark side don’t break the rule of two. We’ve seen it all the way back to Darth Bane.

Darth Plagueis encouraged Darth Sidious’ training of Darth Maul.
